Cajun Breakfast Fries
I discovered this meal when I first moved in with my husband and we started Whole 30. However, I needed to find a good breakfast meal that is also vegetarian which was new to me. While this recipe is called breakfast fries, my husband and I eat this for lunch regularly especially since we’ve been working from home during COVID and can pop something in the oven real quick. What makes this dish more exciting is adding that spice of cajun to the otherwise standard eggs and potatoes type breakfast.
To be honest, I thought I would miss cheese on my eggs but with everything else going on you never notice! You can also mix up the toppings. We’ve done mexican style with adding salsa and guacamole or adding various sauces like Sir Kennsington’s Special Sauce or ranch. The options are endless.
Cajun Breakfast Fries
Ingredients
- 2-3 russet potatoes
- 4 eggs
- 1 avocado
- 1 green onion
- 1 TBSP olive oil extra virgin
- 1-2 tsp cajun seasoning
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- ghee or oil for cooking fried eggs
Instructions
- Preheat the over to 350 degrees.
- Cut potatoes into desired fry size and place in a medium sized bowl.
- Add the oil and all the spices and mix until potatoes are fully coated. Spread out the potatoes on a pan, ensuring none of the pieces are overlapping.
- Cook for 30 minutes. From here, raise the temperature to 400 degrees for another 10-15 minutes.
- During the last 10 minutes of the fries cooking, start preparing the fried eggs.
- Stack fries and eggs then top with diced tomato, avocado, and green onion.
