Cajun Breakfast Fries

- 2-3 russet potatoes
- 4 eggs
- 1 avocado
- 1 green onion
- 1 TBSP olive oil extra virgin
- 1-2 tsp cajun seasoning
- 1 tsp oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- ghee or oil for cooking fried eggs
Preheat the over to 350 degrees.
Cut potatoes into desired fry size and place in a medium sized bowl.
Add the oil and all the spices and mix until potatoes are fully coated. Spread out the potatoes on a pan, ensuring none of the pieces are overlapping.
Cook for 30 minutes. From here, raise the temperature to 400 degrees for another 10-15 minutes.
During the last 10 minutes of the fries cooking, start preparing the fried eggs.
Stack fries and eggs then top with diced tomato, avocado, and green onion.
